During Chinese New Year, we celebrate by eating food that signify good fortune. Like pineapple tarts. Pineapple is called ong lai in Hokkien (a Chinese dialect) which means the coming of prosperity.
These bite-sized tarts are a fave at CNY because the pineapple jam filling is a little tangy and sweet and the pastry is crisp on the outside and just melts in your mouth.:)
Even though the ingredients to make these are available all year round, I only make them during CNY because they are really tedious to make.
I have to weigh and roll both the filling and the dough into balls before flattening the dough and encasing the filling. Then they have to be brushed with an egg wash before baking. It gets really tiring when you have to bake hundreds. And more so when you have relatives who pop these into their mouths like candy. *LOL*
As always, I've kept the layout pretty flat and simple, utilizing notecards, washi tape and stickers.
Hope you are having a great week so far!
